Tip 1: Angles don’t matter.
No kidding, the angles do matter but it's not what you think. The ideal is to keep the angle that came stock with the knife. But it doesn’t matter if it’s one degree of or another. As long as you maintain the same angle throughout the sharpening process.
Tip 2: APEX
Make sure that we apex our edge. What does completely apexing an edge mean? That means that both sides of the bald come to an exact point in the middle. Don’t round it off in the middle. Don’t flat point it in the middle. Make sure that both side of the blade touch each other and come to a point in the middle.
Tip 3: Work Backwards
Always sharpen backwards on the stone. Don’t sharpen back and forth. You can do that but that involves a lot of muscle memory and how well you can maintain an angle throughout your sharpening process. But it’s easier to maintain an angle backwards and not to overshoot your angle. Another reason is that you can’t physically slice in the stone when you overshoot the angle.
